These mixed vegetable pakoras are favorite snacks in India. There are endless variations of Pakoras, also known as Bhaji. As the name suggests, vegetable pakoras mixed with different types of vegetables are made. Pakoras are great as appetizers or snacks for any type of gathering. They are perfect for a rainy day, with a more delicious one cup of spiced tea. This recipe will serve 6.

INGREDIENTS to make mixed vegetable Pakora’s.
•Peel 1 cup of potato and cut it into very small pieces

•Cut 1 cup cabbage into very small pieces

•1 cup packed spinach roughly chopped

•1 cup cabbage finely chopped

•2 green chilies finely chopped to taste

•1/ 2 cup gram flour (gram flour)

•2 tablespoons oil

•1 tbsp coriander (coriander)

•1 tbsp fennel seeds coarsely ground (fennel)

•1/8 teaspoon asafoetida

•1/2 teaspoon red chili powder

•1/2 teaspoon mango powder (mango powder)

•1/4 teaspoon garam masala

•1/ 2 teaspoon salt

•Oil for frying

STEP 1: In a bowl mix all the dry ingredients, gram flour, coriander, fennel, red chili, salt, and asafetida. Mix it well l Add potato, cabbage, spinach, cabbage and green chilies and oil to the dry mixture, mix it well and set aside for about ten minutes.

STEP 2: When you are ready to fry the pakoras, dry the mixture according to the need of 1 or 2 teaspoons of water to make a soft dough. Heat at least one inch of oil in a frying pan over medium-high heat. For the test, add a drop of batter to the oil. Batter should come up and not change color immediately. Put two tablespoons of the mixture in the oil with your fingers. Do not overlap pakoras.
